One thing that almost never fails to make an appearance when I BBQ is Halloumi. I love it just grilled or served with some cherry tomatoes but this recipe provides a little variety and makes for a great side dish.
I really like the Halloumi from Costco. I find it really good quality. It not only cuts well but also cooks really well.
With this dish try to have everything ready for when the Halloumi has cooked, as personally, I think it is much better when the Halloumi is warm. It is fine to serve it cold but I don’t think it tastes as good.
Halloumi, Mint and Pomegranate Salad

Ingredients for the Halloumi, Mint and Pomegranate Salad
- 1 packet Halloumi
- 12 Baby Tomatoes
- 2 Tbsp Pomegranate Seeds
- Pomegranate Molasses
- Handful of fresh Mint
Unwrap your Halloumi and remove from the packaging. You may want to do this over a sink as there is often liquid in the packey. Slice the Halloumi into 1cm slices. I usually get 7-8 slices per pack. Put to one side.
Take your Cherry Tomatoes and skewer them and again put to one side. Chop your mint (it can be roughly chopped).
Light your BBQ and once it is ready to cook on, place both the Cherry Tomatoes and Halloumi directly above the coals. Keep an eye on the Halloumi as it is easy to over cook it. I try to only flip once so depending on how hot your grill is this should take 3-5 minutes before you flip. Keep turning your tomatoes also. I like them getting a little burnt.
Once your Halloumi is cooked remove and place in a bowl with the Cherry Tomatoes. Add the Pomegranate Seeds, Mint and give the whole dish a good drizzle of Pomegranate Molasses. Mix all the ingredients together and serve.
