A Lovely Simple Side Dish
I struggle with what side dishes to serve with the food I cook on the BBQ. The simple fennel side with parmesan is simple, quick and easy to cook but tastes lovely. Some people don’t like fennel due to the licorice taste but I would encourage you to try this version.
I was only cooking for 1 so just used 1 fennel bulb, but increase this in line with the number of people you are cooking for.
The Preparation and Cook
We had some fennel left over in the fridge so I thought I would use is up cooking it on the BBQ. I do think the general taste of some foods can be changed when cooked in a certain way. Gem Lettuce is one such food.
I started by slicing the fennel, placed in a bowl and drizzled the olive oil over it ensuring it was all well covered.
For this cook I used the Petromax FP20 cast-iron skillet. I placed it on the direct area of the BBQ, and allowed it to heat up. I then placed the fennel into the skillet and cooked for 10 minutes each side. Once I had turned the fennel over the first time I sprinkled over some parmesan.
Once cooked I served it up with Salt-crusted Sea Bass.
The Verdict
As with most my cooking this was a relatively simple dish to cook. However, I think it tasted great with the char and parmesan which helped tone down the licorice taste, which I know some people don’t like.
I have read this can be great with some lemon juice mixed in so I will be trying this again using a little lemon rind and juice.

Ingredients
For the BBQ with Fennel and Parmesan
- 1 Fennel Bulb
- 1 Tbsp Olive Oil
- 1 Tbsp Parmesan
Method
Start by slicing your fennel and place in a bowl with the olive oil. Mix well so all the fennel is well covered with the olive oil.
Bring your skillet up to cooking temperature and then place your fennel into the pan and allow to cook for 10 minutes.
After 10 minutes turn the fennel over. Check that there is a char forming otherwise cook for a little longer until the char starts to form. Once you have turned the fennel over sprinkle with the parmesan and cook for a further 10 minutes.
After 20 minutes remove the fennel and serve. I had this with sea bass which went really well.
