Halloumi and Honey Just Works!
Growing up with my parents BBQ, they alway cooked Halloumi. Naturally that has meant nearly every time I do a BBQ with friends and family it makes an appearance. It just works on the BBQ.
I came across a recipe where Feta had been wrapped in Filo pastry, and it gave me the idea of trying a similar recipe but with Halloumi. This is really simple to put together and having the addition of the honey really makes this dish incredibly delicious.
Preparation and the Cook
I like to think most the dishes I cook are simple and straightforward to cook and this definitely falls into that category.
Slice your Halloumi into 1cm slices. Typically this will give you 6 or 7 from the block. Using shop bought filo pastry (unless you are gifted enough to make your own) take 1 sheet and slice it in half. Wrap each piece of cheese in the half of pastry and set to one side. This doesn’t have to be neat either.
This dish just works. It actually gives the halloumi a slightly different taste and texture. The honey adds some lovely sweetness and this makes for a great starter or small lunch. Try it you won’t regret it!
Filo Wrapped Halloumi with Honey

For the Filo Wrapped Halloumi
- 3 sheets of Filo Pastry
- 1 Block of Halloumi
- 1 Tbsp Olive Oil for Brushing
- Glug of Rapeseed Oil
- 2 Tbsp Honey
- 4 Tbsp White Wine Vinegar
- 1 Tbsp Sesame Seeds
Take 3 sheets of Filo Pastry and slice in half. Slice your Halloumi in 1 cm slices – this should give you around 6-7 pieces. Place a slice of Halloumi on a sheet of filo and wrap. This does not have to be neat. Repeat and wrap all your halloumi slices and place to one side.
Light your BBQ and whilst that coming up to cooking temperature, mix the honey and white wine vinegar in a pan and slowly heat through.
When the BBQ is ready to cook on place your cast-iron skillet directly over the coals. Once the skillet has heated up add your rapeseed oil and allow this to heat up.
Brush the filo in olive oil and then place in the hot oil. Cook for 4 minutes and then flip them over. Brush with the honey glaze and sprinkle with some sesame seeds.
Cook for another 4 minutes and then remove the Halloumi from the BBQ. Plate up and then drizzle some more of the honey glaze over the Halloumi.
