Day 7: Mexico and Tacos

Day 7 sees us move back west and over to Mexico for the World Cup of BBQ. There are so many great dishes to cook from Mexico, but I came across this Tacos Gobernador, which sounded great.

Tacos Gobernador (or Governor’s Tacos) is a Shrimp based dish, with some fantastic Mexican flavours and quite a lot of cheese, all served in a soft tortilla.

Preparation and the Cook

For this cook, I used King Prawns. I started off by marinating them in the Mexican Jalapeno and Lime rub from The Smokey Carter. Next step was to light the BBQ (The Aldi Kamado again) with the deflector plate in place. If you are doing this cook on a Kettle BBQ, just set it for 2 zone cooking to help control the cook.

I added a Steel Skillet to the BBQ, added the oil, allowing it to melt, and then added the onions, cooking until soft. Next in were the spices followed by Adobo Sauce and remaining ingredients – except for the prawns.

Once all the ingredients had combined, I pushed the mixture to one side of the skillet and added the prawns, cooking for around 7 minutes.  At the same time, I started to melt some mozzarella in a pan on the hob. I had tried to get hold of Oaxaca, but could find any in time.

When the prawns were cooked I combined with the rest of mixture for around 5 minutes and then took the skillet off the BBQ.

The final step was to top the Tacos with the melted cheese and spoon on the Prawn mixture. I also added some home-made candied Jalapeños – definitely optional. I would have liked to have the cheese a little more gooey!

The Verdict

This was one of my favourite dishes of the World Cup of BBQ to-date. It had great flavour with a lovely amount of spice. You can’t go wrong with a Taco.

It is also quick to prepare and cook, so is perfect if you fancy something like this midweek – would definitely feel like a treat.

 

Tacos Gobernador

Tacos Gobernador, aka Governor’s Tacos!! Marinated Prawns (Shrimp) served on Cheesy Tacos, topped with some candied Jalapeños.

Ingredients

  • 240g Raw King Prawns (defrosted)
  • 1 tbsp Mexican Jalapeno & Lime Rub (optional)
  • 2 tbsp Olive Oil
  • ½ Onion (finely diced)
  • 1 Large Tomato (chopped)
  • Handful Poblano Peppers (diced)
  • 2 Garlic Cloves (crished)
  • ½ tsp Smoked Paprika
  • ½ tsp Onion Powder
  • ½ tsp Oregano
  • ½ tsp Cumin Powder
  • 2 tbsp Adobo Sauce
  • 180 g Grated Mozzarella
  • Hanful Coriander

Instructions

  • As an optional step start by marinating your Prawns in the Mexican Jalapeño and Lime rub. 30 minutes for this will be fine.
  • Whilst the Prawns are marinating, get your BBQ prepared and start by adding your skillet. Add your oil and once heated up add your Onions. Keep stirring until they start to soften. Add the Garlic, stir them in and cook for a couple of minutes.
  • Next add the Smoked Paprika, Cumin, Oregano and Onion Powder to the Onions and mix well. Cook for around 1 minute than then add the Adobo Sauce, Tomatoes and Poblano Peppers.
  • Cook for around 5 minutes and then push the mixture to one side before adding in the Prawns. Cook the prawns until they start turning a little pink and then. mix in with the Onion mixture and cook for a further 4-5 minutes.

  • Whilst the Prawns are cooking melt the Mozarella in a pan, either on the hob or on the BBQ.
  • Once the Prawns are cooked, add the melted cheese to the Tortilla and then spook over the Gobernador. Sprinkle over the Coriander and optionally add some Candied Jalapeños.
